Quick Courgette and Chickpea Curry

Ingredients
3 courgettes sliced or cut into small chunks
1 onion (either yellow or red)
Can of chickpeas drained
1 tsp turmeric
1 tsp coriander
1 tsp garam masala
Method
STEP 1
Fry the courgettes and onion on a low heat until slightly browned. Add the chick peas and stirSTEP 2
Simmer on low heat for a few minutes before adding the turmeric, coriander and garam masala. Season with a little salt if required. Cook for about 10 minutes or until soft.Serve with basmati rice
