Quick Courgette and Chickpea Curry

Ingredients

  • 3 courgettes sliced or cut into small chunks

  • 1 onion (either yellow or red)

  • Can of chickpeas drained

  • 1 tsp turmeric

  • 1 tsp coriander

  • 1 tsp garam masala

Method

  • STEP 1
    Fry the courgettes and onion on a low heat until slightly browned. Add the chick peas and stir

  • STEP 2
    Simmer on low heat for a few minutes before adding the turmeric, coriander and garam masala. Season with a little salt if required. Cook for about 10 minutes or until soft.

    Serve with basmati rice
